1 flank steak, about 24 oz.
Five spice rub (there is a recipe for that elsewhere on the blog)
1 Tbs. vegetable oil
Coarse salt
Sesame soy sauce (recipe for this elsewhere on this blog)
The steak should be out of the fridge for a half an hour before cooking. Rub the steak with the five -spice rub, about 1 Tbs. per side.
Heat the BBQ to a hot setting about 15 minutes, full bore, drizzle both sides of the flank steak with the vegetable oil and sprinkle lightly with salt. Grill the steak for about 5-6 minutes, again when you see moisture on the outer edges, then flip it. It should be rare to medium rare at this point. Once again i like meat blue rare almost sorta cold in the middle. You may want to cook it a bit longer .
Transfer the steak to a clean wooden carving board to rest for 7-8 minutes. so the meat relaxes and the juices redistribute. To carve, cut very thin slices across the grain and on a 45-degree angle. Drizzle lightly with the sesame soy sauce.
